Salal (Gaultheria shallon), also known as shallon, or gaultheria, is an evergreen shrub belonging to the Ericaceae family. It naturally thrives in coniferous and moist deciduous forests along the western coast of North America, stretching from Alaska to northern California. Salal is renowned for its captivating foliage, featuring thick, waxy-coated, leathery leaves with an elliptical shape. The upper surface of the leaves boasts a rich dark green hue, while the underside is a lighter shade of green. Its small, bell-shaped flowers adorn the shrub in shades of white or pink. After flowering, these blossoms give way to small, spherical berries that transition from green to a striking purple-black color. While edible, the berries possess a tart flavor. Salal branches adorned with these berries are sometimes employed as festive decorations.
Preserved salal is available in the form of a bouquet.
